        You can try the following,

mminfo -av > mminfo_all.txt

        This should list all the information in the media database.

Hardly.  There are lots of additional attributes that are not reported
as part of an "-av" operation.  For example, ssinsert and sscomp.

Is there switch to let mminfo collect all the information in the media
database. Or is it necessary to lookup all the attributes available and
put in a custom query?

I'm not aware of any switch that gives everything, so I think it would
need to be a custom query.  Keep in mind you may also want to expand the
field sizes for some of the fields, as the default field size doesn't
show all the information that's available.
