Regardless of I/O, why would you want to have your backups, a critical piece of
your disaster recovery solution, relying on a piece of infrastructure that may
need the backups to recover?

I would argue strenuously against virtualizing a backup server.
IF you can virtualize and still provide enough I/O bandwidth to perform
your backups and recoveries in a suitable window, I would be very
surprised. Let's assume for a minute you can, though.
Even if your virtualized backup server has enough I/O, though, you're
still potentially making a true disaster recovery situation much more
complicated, if not potentially impossible.
