You specify it via a special directive for that client.  That can be done
on either the backup client or the backup server, but the consensus of
the list is that in most cases, it's better to specify it on the server.

Read up on directives (on UNIX, it's nsr_directive(5), but a lot of the
important details are in other manual pages mentioned by that manual
page).  You basically want to create a new directive on your backup
server, called something like "my_client_name_here skip most of D:",
copy the contents of the default Windows client directive you use into
your new directive, and then add the necessary directives to skip
everything on D: other than the stuff you care about.
