There's a job parameter called "Max Wait Time", along with a few other time limits you can set. The manual has a pretty clear explanation of these parameters in an image:

In my case sometimes the tape runs full and we don't have an 
autochanger. I'd like to have bacula cancel this job after a couple of 
minutes.

how would i achieve this?
