Ok, I've never done stuff at that size. Just as a warning to read on ;-).

First thought, won't it grind with 5TB also, just for 1/3 of the time for a 
full run?
Second thought, if you limit backup bandwidth, you should be able to limit 
effects. If it can't be done on Bacula's level, qos'ing stuff on network 
level should yield the same effect.
If the fs to backup can deliver n mb/s, then limiting Bacula's slot to 
let's say n/5 mb/s should minimize the effect on normal operations.
