My question now is, who do I tell Bacula to use the "monday" tape in slot 1 for the backup on monday evening and so on?
Why do you want to do that? Lets Bacula manages all the tapes.
If you would like to get all Monday's backups on single tape (and others days backups on others tapes) set a Volume Use Duration parameter of the Pool. Bacula will use any tape for a given time only.
Do I have to create a single pool for every single day together with a single entry for every day in the schedule definition?
That would mean, that during labelling, I would assign the volume name "monday", slot number "1" and pool "monday" ?
IMHO - It is not required.
