One hates to say this, but...

there are a number of documents from Microsoft that deal with disaster
recovery of Exchange 2003 data. The TDP for Exchange...er...I mean TSM
for Mail (Exchange) documentation points to those documents when
discussing restoration of data backed up from one Exchange server onto
another Exchange server. I personally have been meaning to get through
those docs and write a boiled-down step-by-step, but I haven't gotten to
it.
