You may want to exclude *:\exchsrvr\dsadata\*.* *:\exchsrvr\mdbdata\*.*
and *:\exchsrvr\mtadata\*.*
That's where the directory, info store and the mta are usually held
(although depends upon Exchange config). Unless exchange is down you won't
get a very meaningful backup of those files.
Better to use a Connect Agent / TDP

On NT clients, the (default) EXCLUDE list should contain something
like the following lines... the system32\config should be there from
the installed sample dsm.opt! Registry hives are backed up via API,
which gets current instance (rather than the locked-file version).
