Michael,
If you have the latest Exchange Connect Agent, then there is a new command
you can add to the bottom of the command procedure that runs on the Exchange
box.
You can specify:

EXCDSMC ADSMAutoDelete:* /IfOlder:10

to keep just the last 10 versions.
