Dan,

I didn't get the point across that I was trying... I am sorry.
I will try again...

The Information Store and the Directory are treated as totally
separate entities.  EACH database is backed as its
own one large object. (just as you stated)

So, if you run a full backup for the Information Store you
get ONE LARGE OBJECT containing the Information Store data.

If you run a full backup for the Directory you get a different
ONE LARGE OBJECT containing the Directory data.

I was trying to get across the point that when you back up
either database, it is NOT done at a granular level
(like per note or per folder, etc. like you can do under
Lotus Notes backups)

Although, when restoring the Information Store, you can
specify if you want Public, Private, or both to be restored.
But that is the most granular you can get with the
documented Exchange Server backup API's.
